About WAKEAT

WAKEAT (Erika Hirose)* has been making craft miso for over 10 years. By working with restaurants, she realised there is so much leftover bread (and everyone wants to do something!) Miso is Japanese traditional fermented bean paste made with normally soy, grains, salt and mold. WAKEAT makes only natural fermented miso from scratch by following the traditional way that she learnt from her grandmothers in Japan. She opened a craft miso brewery in Rotterdam in 2017. In 2022, she also opened a mobile craft miso brewery in her hometown Susono (Japan), next to Mt.Fuji. Working her team of grandmothers to save food waste by turning them into miso.

The Klimaatmuseum brings together artists, scientists and students from the University of Amsterdam (UvA) around the one topic that affects us all: the climate crisis. Works of art and interactive installations bring the UvA’s latest climate research to life. You gain more insight into the problems and solutions of the climate crisis and discover how the various fields of research are connected. You will also be inspired to take action yourself for a better climate. Together, we will turn the tide.
