MISOnify Your Senses: From Leftover Bread to Beats with Miso by WAKEAT
Join us for a hands-on workshop where we’ll transform leftover bread into delicious, homemade miso, all while addressing food waste and promoting sustainability!
In this workshop, you'll learn the basics of miso, its origins, and its role in Japanese cuisine. You'll discover the nutritional benefits and versatility of miso in cooking. Then, you'll get hands-on experience turning leftover bread into rich, flavorful miso, with step-by-step guidance on using the Bread Miso Making Kit developed by WAKEAT.
As a bonus, we’ll explore together with sound artist Marcin Cieslak how to use data from the miso fermentation process to create unique sounds and music, blending art with science. Bring your own leftover bread, and let’s make miso magic together!
WAKEAT (Erika Hirose)* has been making craft miso for over 10 years. By working with restaurants, she realised there is so much leftover bread (and everyone wants to do something!) Miso is Japanese traditional fermented bean paste made with normally soy, grains, salt and mold. WAKEAT makes only natural fermented miso from scratch by following the traditional way that she learnt from her grandmothers in Japan. She opened a craft miso brewery in Rotterdam in 2017. In 2022, she also opened a mobile craft miso brewery in her hometown Susono (Japan), next to Mt.Fuji. Working her team of grandmothers to save food waste by turning them into miso.

Works of art and interactive installations bring the UvA’s latest climate research to life. You gain more insight into the problems and solutions of the climate crisis and discover how the various fields of research are connected. You will also be inspired to take action yourself for a better climate. Together, we will turn the tide.
